Just in case you thought I only ate rice and beans… Here is another mono meal prep for you.

Cranberry Lemon Tuna with Red Cabbage Slaw

Let’s get right to it.

The Tuna

Tuna - you want a large can or two of the solid white albacore tuna in water. It’s right there next to the nightmarish government chunk light tuna some of us grew up on (yepo i said it, I’ve been there!). Really though, you can use either one…you will however make it repeatedly if you use the solid white version, and probably never again if you use the grey chunk light tuna. So there’s that. Either way, look for one that is ethical, sustainably caught, and dolphin safe (I think most at least claim that now, not sure how real that is 🤷🏼‍♀️) if it is at all possible and within your budget.

Dried cranberries - you want the sweetness of these for the recipe so either regular sweetened, juice sweetened, or meet in the middle with Craisins 50% less sugar (this is the one I usually use). The 50% less sugar one will be better if you are trying to maintain or lose weight.

Lemon - the zest of about one lemon. Lemon juice wont give you the same results, it will make it too watery. You need the zest. Go get a lemon zester (why don’t I have an amazon link??)

Mayonnaise - the most controversial part (aside from the tuna). 1) You can make and use your own homemade mayo. 2) You can use regular ass mayo. Or you can use light mayo. What are your current goals? If they are not weight loss, you can use whatever you want here. If you are diet dogmatic (paleo, primal, weston a price, etc.) I am about to lose you here… Hang on if you can. If you are in a caloric deficit (weight loss/diet mode), you will either want to use light mayo (I do all the time!) or leave out the tortillas. Choose happiness my friends, drop the dogma, go with the light mayo. It is usually right around 1/2 the calories of regular mayo, making it 100% worth swapping out.

Toritillas - Depending on your goals… No goals 1) whatever mini tortillas you like. Weight-loss goals 2) zero carb mini tortillas. NOT because they are low carb, carbs are your friends. More importantly, there are LOW CALORIE. They are 25 calories for ONE, regular tortillas are 100 calories for ONE. The the zero carb ones are a huge payoff.

Lettuces, greens, arugala - use whatever you like and as much as you like.

How to put it together - drain the tuna (give the water to your dogs), zest your lemon, add the cranberries, and add mayo to taste and texture. Add some salt and pepper if you want. Load up your tortillas and enjoy! That’s it. It is good in the fridge for several days of continued deliciousness.

Red Cabbage Slaw

Red cabbage - chop into thin strips. Salt to season. Red, because it’s beautiful.

Carrots - thinly grate or ‘peel’ one small to medium carrot. I usually just use a peeler and peel thin strips.

Seasoned Rice Vinegar - make sure its “seasoned”. You will need a few tablespoons give or take.

Red Pepper Flakes - a few shakes of a tail feather.

Garlic - a few cloves minced. Dehydrated works too.

How to put it together - put the cabbage and carrots into a bowl. In a seperate cup or bowl, mix there garlic, pepper flakes, and vinegar. Taste. If it tastes good, mix it all together. This will also keep several days in the fridge.

The red cabbage recipe is a variation of my sister in laws slaw. I ate my weight in it while I was in Cali in January. It was amazing! The cranberry lemon tuna is a throwback variation of an OG Whole Foods tuna salad from when we lived in Colorado. Yum!

And yes, I mono eat this too, just like the Cilantro Lime Beans and Rice. Meaning, if f I make this, I will eat it daily for Lunch/Dinner for the week. I tend to keep within my caloric ranges when I have everything ready to go. Give it a try and tell me what you think.
